You run a bike on the street without antifreeze? Wow!!!
When I used to do track days with a water cooled motor it was always a consideration when we were heading to Barber or VIR late in the season whether to DRAIN the radiator completely since we were often leaving in sub-freezing weather and I don't have any friends with a heated trailer!!!
And on the street, I ride all year round, so when I had a water cooled bike I always ran anti-freeze.
But for the track, even if not required, a crash with spilled antifreeze will introduce you to lots of people with much advice. Spilled water, (or water wetter), won't even get you noticed!!!
