    For the Chef's


    I need a good recipe for Mahi Mahi. I only had it once and have never cooked it brfore. I really did like it when I had it, should I use some smoker chips on the grill for it, or broil, maybe pan fry.

    IMO fish tastes best when grilled. You will also want to look into getting a wire basket to use on the grill (can't remember the exact name for it, it keeps the fish in one piece, lets you flip it, etc).
    Mahi Mahi is a real light taste, so go easy with the seasoning. I have used a simple marrinate made of extra virgin olive oil, teriakki sauce, lots of garlic, and fresh shredded basil. Marinate the fish for about two or three hours in the fridge, grill 5 minutes per inch thick, per side over a medium flame. For a side chop up some mango and pineapple, and a Pinot Grigio or chardonay for the wine (if you haven't tried it Brancott makes a great one). Hope this helps. Enjoy...
