    electric or wood? Picked up an electric last summer and pulled pork/ ribs and jalapeno poppers have been great.... I even thought of smoking the prime rib

    Charcoal, I use a Weber Smokey Mountain. Depending on what I'm smoking I'll add no wood (turkey,) a little bit of wood (prime rib, leg of lamb,) or quite a bit (pork shoulder, ribs.) The charcoal alone will give it a light smokey flavor....speaking of, I'll be doing a pork shoulder for the Super Bowl.

    same here pork shoulder in the smoker and.... armadillo eggs ( jalapenos with cream cheese filling wrapped with spicy italian sausage then smoked)

    Did a skin-on Pernil last week, then chopped up some leftovers and hit them in the oven to crisp them up for carnitas tacos last night. Delicious.

    so does anyone have an in or reccomendation on who i can go to to get some goodsub primal cuts? for ribeye or such? good high end with great marbling etc.... there was someone on thsi board who raised cattle from I remember..... Sold him a pair of heated gloves once'

    You can probably find something closer to you but when I lived in Boston I used Savenor's when I wanted really nice beef. My local butcher in Rehoboth works with the area cattle farmers to provide premium meat, I'd check out your local shops.

    it was Highsider from this site. sent him a pm . I'll look a bit more locally but need good marbling that's the key to dry aging. Grass fed tends to make it a bit more leaner, from what i've read.
