much beef in the supermarkets is local, dairy cattle, especially Holsteins, while they may not be prime, are good beef cattle, dairies slaughter them on average 6 years old, when milk production slows down, they fatten em up. some cows may make it to 10 or 11, but never the 20-30 years of the past, the dairy near me that milks about 350 cows, slaughters 75 of em every year

I had the Omaha Steaks Filet's several years ago, pretty good.
I got Allen Brothers steaks for a gift this Christmas. They're tasty!

My wife’s company sent us some Allen Brother’s prime cuts for Christmas; fillets and ribeyes. Decent quality, not as good as fresh prime grade from the butcher. I doubt I’d ever consider a subscription or even a one off order. I have plenty of access to good butchers with higher grade beef. As I’ve been learning about butchering, I am considering doing half a cow.

I remember back in the day Hills Food service. A big box truck would show up and fill our huge basement chest freezer full of meat. looks like they are still around.

As I’ve been learning about butchering, I am considering doing half a cow.

they have a butchering class here at one of the hi end meat stores. I'm curious. but not for the price they offer but for the knowledge/ learning curve they lessen its probably worth it

I feel for you. I had a friend that did chickens and was pretty disturbed. I know it's not for me. More power to the people who do it for us.

my chickens knew when I was chopping heads, they would stand just out of reach, and scatter when I made a move, But, I found a solution,
I had a regular long handle round point spade shovel within reach, and something made me grab it an swing, just like a golf club, I teed the head of that chicken nearly a hundred feet, from then on, that was my method, much more efficient than chasing them and using an axe at the chopping block.
