Edit: That reminds me of 1985- I returned to UVa to finish my degree, and I used to park behind the Econ building, right next to one of those (it had a chromed tank) ridden by one of the professors. I remember how the forks would shake visibly at idle. Sounded sweet!

With such low mileage and apparently nice shape I would keep it stock and enjoy it for what it is. If you really want to go for some authentic British cafe fun, then consider trading with a collector who values mileage and original condition over pizazz. If you still really want to go cafe with it, then at least set aside the original tank & body panels in clean dry storage.
A couple British bike events worth attending to see what else is out there are the MassBIA Spring show, http://www.massbia.com/events/event_spring2014.html, and the BSA Owners Club annual meet, http://www.bsaocne.org/index.html. The latter has a lot more bikes (of all British makes) typically.
