Waaa.....I suck at working on bikes.

So I'm in the middle of trying to change the coolant in the R1, BUT THE FUCKING COOLANT WONT COME OUT.

The reservoir is half full, and wont drop any. I ran the bike for a minute or two, but got nothing. This thing is supposed to hole 2.5 liters, I have about 3/4 liter in the drain pan.

    What am I doing wrong??

    I did that.

Then I tried adding water to the radiator, thinking that would force the green stuff out, and all it did was go right through the radiator and pour out of the drain plug.

    What drain plug?

You need to take off the hose leading from the water pump to the radiator (careful, it will piss out everywhere) and lean the bike over on the left side.

Make sure you get distilled water to refill

Always have 50/50 lying around its bad paractice to ever put water in in case you forget

Also regular antifreeze is bad poison and kills dogs if left exposed lso they can get at it

Some water pumps have a bleed valve designed for purging the coolant system.

Last time I changed it, I cheated stuck a small hose ever so gently into the filler hole, and turned on the shop vac. Got pretty much all of it and no spillage.

Yes, I know, I am a hacker at times, but if your going to piss in the pool, put some pizaz into it and piss off the diving board....

If water went right through the whole system (motor included, then you've gotten all the coolant out that was in there. You'll have to remove the resevior tank to empty it, or syphon the fluid out of it.

Edit, re-reading your post, I see that your radiator has a drain. Put the plug back in, take the inlet hose off the radiator and spin the starter. This will push the coolant out of your motor. If nothing comes out, it's empty...

It is possible that you were low on coolant. The resevior can be misleading sometimes...
