I was going to recommend an 06+ R1200GS (not adventure), if you can get past the fact it will turn heads because it looks like a giant dirtbike. It's more than fun at non-license loss speeds but will still get you well into that realm if you want it. All the while you can do this 2 up or solo, and it's a blast.

Had mine since 2007, so far it's the only bike I've owned this long. Taken all dirt trails from Greenfield MA to the Canada border a couple years ago, and rode to Michigan last summer as well. It did all of this 2-up without any complaint.
I'd second the GS endorsement. Does most things pretty well - nothing truly brilliantly, but its a fantastic jack of all trades.
Could bag an 06 or so for that kind of money too. Maintenance is pretty DIY-Friendly. Mine is my car for 10 months of the year, my funbike, and even had a TD on it

I was on the above trip with Catamount. I can attest to the fact that he never once complained about the lack of wind protection on his Speed Triple, nor was he exhausted by the end of each day.

And don't tell any of the folks I know with Sprint ST's that they're not sporty enough... because trust me, those bikes can rip.

Maybe some Gilles variobars or Heli's and a windscreen? I wouldn't completely rule out the "sport" bikes yet.
