The pegs are high enough that unless your body position is really really wrong it'll likely never touch the ground especially on the street. I haven't ridden an SV w/ them, but any other bike that I have I've only touched a peg to the curb not the pavement in any significant way while cornering. Yes that was a bit scary/startling but an edge case as far as this conversation goes. If you've never touched your stock pegs to the ground don't worry about it. By the time you have to worry about such things, you'll know how to stand a bike up in a corner a little more. They're made for racing.
That said I'm not a WC rep... just speaking from my own personal experience.
