How come my GoPro vids never look nearly as good as the "shot entirely on GoPro" vids?

No idea. Can say thou that all the footy they run is from GoPros. See them all over the place (gopro staff) with cameras mounted on broomsticks at Winter X and Daytona. Could be your compression style, upload, etc. They might be doing some post-production to clean up the image, pop colours, too.
Maybe your video editing software degrades the quality a bit? I know my videos look MUCH better before they are edited, especially on a big TV. And I just have the regular HD hero.
