If you have a 750 that's pretty much ready to go. Race that. Novice HW classes are pretty mellow compared to MW actually. Get some weekends under you belt and then figure out your game plan from there. Not only will you be better educated on the track, but also having spent some weekends up there you'll be better educated OFF the track. In regards to class options, structures, what bikes do well, talking to other races, etc.
Novice and Am classes are all about the rider anyway. Bike doesn't matter much. I remember as a Novice racing my 72hp 20 year old Ultralight bike in HW and running in the top 3 and top 6 or some shit in a MW race. Just go do some laps.
