If you're hellbent on putting some other bike's stock shock in there till you either find or save up for a Penske or Ohlins, then whatever... it's not gonna be WORSE than the stock shock, but you're gonna wanna get rid of it if you ever ride a bike with the right shock so you'll just end up swapping shocks twice instead of once. +1 on vortex fairing stay. Not many other options out there.
Racetech springs & Emulators are the typical go-to for fork upgrades. That's what I raced on last year until I had Peter Kates work his magic & put together a custom cartridge set-up, but the emulators were good enough to get me into the sub 1:20's.
Exhaust I wouldn't worry about too much right now. That can come later. Concentrate on getting the bike track worthy first (suspension & tires) then worry about trick bits later.
I plan on having this bike be entirely function over form. The exhaust was on my wishlist just because I would imagine this thing to be pretty damn heavy and it looks like it could even drag. If that doesn't seem to be an issue for anyone else, I have no problem leaving it on. I'm definitely gonna have gmd work the front end and geometry but I wanna figure out what tires and stuff i can get a hold of before I do that. I'd like to have it all done at once ideally.
I think i'll start taking this thing apart just for funsies to get to know her a little...

Oh a full exhaust or even a slip-on is definitely functional on an SV, it's just (in my opinion) lower on the list of priorities than suspension & tires. Hell, to race in Middleweight Production Twins you actually have to KEEP the stock exhaust.

ive heard a 520 conversion will save you a little weight. im keeping my 525 chain till i need new sprockets, then im replacing them all at once. i tend to use DID cains.

Penske or Ohlins. Either one will work well.
If you NEED a new chain & sprockets, then you might as well replace with a 520 kit. Doesn't make too much difference what kind. 15/47 would work probably well for ya.
If you're curious, I ran 15/46 Vortex sprockets & a DID ERV3 chain for the last two years.

overflow bottles...zip ties
bodywork brackets...1/8" aluminum stock from home depot and a dremel/hacksaw. bend away.

Just make some body mounts out of 1/4" AL ...... bend to desire.....drill holes....mount
