Let me offer my $0.02.

I own both helmets you speak of. I have a black Quantum II and the following Signet GTR:



The people that speak of fitment are correct in that every Arai helmet is built to fit a certain head profile. Granted I own two different they both fit me pretty well. The only thing I can tell you is go to a store that has them all and try them all on one after another. Its the only way to tell the difference between the different fitments.

Just went through the helmet ordeal as Arai seems to not make a helmet that fits me anymore. Loved my Quantum and swore by Arai but after trying on EVERY type of Arai could not find any that fit well (thanks to motomarket for trying) so after trying everything under the sun I ended up between the Shark RSR2 and the Shoei rf1000. Chose the Shoei because it was 100 dollars cheaper and the color schemes were better. Shark grafics were ungodly ugly with solid colors of black or grey (none of which will get you noticed on Storrow DR). Just got the new helmet in the mail and very pleased with the fit and the optional breath guard and chin guard. I was also tempted by the Scorpion exo700, the fit was great but can't bring myself to trust a 200 dollar helmet in a crash.
