I know a bit about carbs and I understand how they work, but I have no idea what flatside and downdraft carbs are, what makes them different/better, etc... anybody care to enlighten me?

It keeps the air velocity constant, regarless of what positon the throttle plate is...

Hang in there, I just got finished drawing up a carb diagram, and now I have to write the text....I work too, so I gotta kick my daughter off this computer to get anything done! After she does her homework...
