Help me make poutine.


No, not poontang... poutine. I think it's supposed to be made with cheese curds, but I have no idea where I'd buy that -- I'm under the impression that because cheese curd goes bad quick, you have to get it direct from a dairy.

Should I use mozarella instead? Or a mild cheddar? Or a blend?

If you understand this post, then I love you. But seriously, any help would be appreciated!

I already have the gravy ready to go, I just don't know what's the best and/or most authentic cheese to use...

White cheddar cheese curds. You should be able to find it at a grocery store in a vacuum pack, but it may take some work. The closer you get to canada the easier it should be to find.

Thanks! I'll try Hannafords or Shaws first, then go more up-market from there. Are cheddar curds that much different than just regular cheddar?

Yeah, it's basically cheddar cheese before it's aged and pressed into blocks. Little chunks of rubbery cheese. I personally find it to be nasty shit but if you want poutine that's what you want.

I'll give it a try. I've never had it with actual cheese curd, but I wanted to try what it's supposed to be like and then substitute something else if it turns out I don't like it. I've only ever had it with cheddar/mozzarella.

I just had it again over the weekend going to Quebec to visit family. My favorite is chicken poutine, preferably with green peas (don't knock it til you try it)

You need BBQ gravy, you can buy it over in Quebec, it's nowhere to be found around here. St-Hubert BBQ gravy is the best, but another good brand of BBQ gravy would do. I never found any type of cheese curds around here. Maybe you could ask your local dairy factory? We buy it in Quebec but it's really just as good as it gets when it's FRESH. Once you froze it, it's just not the same, it doens't squeek, it doesn't melt as nice, etc.

If you cannot find fresh cheese curds, I suggest you use mozarella cheese and cut it in small cubes, or buy shredded mozz cheese. Top your fries with the cheethen poor your gravy on top, the cheese will melt nicely.

Another substitute for gravy is spaghetti meat sauce (no veggies). It's very good, specially if it's a spicy italian style sauce.

I don't really make it anymore here at home, because it will never taste as good as a fresh one made in the restaurants up there. I miss the food from my home country...

Poutine is also definitly BEST with the cheese curds, not shredded cheese. But if you have no other alternative...and I must say, not all poutines are good. In fact, there is only a few places in Quebec where I will eat it such as "Le Coq Roti" and "St-Hubert Restaurant". I don't like "La Belle Province" poutine because of their yucky soft brown french fries, looks like they've been using the same old cooking oil forever...GROSS.

I agree.
I have always found some of the best poutine at popular roadside shacks/trucks.

Get the gravy very hot and pour over fries and curds.
Ever since LBP got big their food quality has gone downhill.

The parties and the poutine are what I miss the most about Quebec.
Poutine in Ontario was close...but not quite the same.

I think you can actually buy "poutine" sauce now up north.

I would like to try the BBQ Gravy thing too, but I'm not sure where to get it (though I suppose I can get it online somewhere?). Also, I'll try poutine râpée some day too... it sounds good!

Never heard of them being sold.

We used to make them along with some stuffed cabbage and meatpie.


The only place that makes decent French Acadian food around here is a little place called Stanley's in Gardner. The meatpie, homemade kielbasa and kapusta is top notch. Cheap too.

haha!! Yeah ok, I got the point mister.

Ok, to be honest, there is actually another "variant" of a poutine/lasagna that I tried in Quebec and I LOVED it.

It was potato skins at the bottom of the dish, topped with meat spaghetti sauce, melted velveeta cheese, bacon and topped with mozzarella cheese. OMG. Sooo good!
