I have been thinking about sourdough pancakes. I've heard good things. Pizza is on the list too.

Mix 1.5C water and 1C active starter

Add in 2C flour and mix.

Let it rest a bit to get active, maybe 30 min? Sometimes I dont have time and its still fine

Mix in 0.5C oil, 2 eggs, 2TBLSP sugar, 2 tsp salt

Separately mix 1 tblsp water with 1 tsp baking soda and fold into batter

    Theres your waffle batter

I tried sourdough pancakes with some starter discard a while ago... I didn't care for the results.

Ive never tried pancakes, but the waffles are the truth.

My normal waffle recipe involves folding in whipped egg whites and shit, but these are 10 times better. Crispy outside, light and airy inside, etc. Literally perfect.

Anne was gonna try making sourdough, a couple weeks ago, but she couldn't get the starter going, I think we keep our house too cold (62°)

Starter will go at 62 but it's going to take longer for everything. My house is 77ish and thing happen pretty quick. I made one loaf back when we had some cooler weather and the house was 69-70 and it was way slower.

A cold night. Good time to make a couple loafs of Providence bread. My favorite. Since I got my mixer I been doing pies too. Sausage maker/stuffer coming too. Cannot get good sausage in supermarkets.
