Everyone seems to run on Friday. This is great but doesn't always work for meanyone do NHMS on weekends? I realize they probably race most weekends, but thought I'd ask...

Nyst does weekends. I'd assume it would be tough to get a weekend day at nhis because of the organized racing.. as far as I know, there is no organized racing at nyst which is why they have so many weekend days?
Another vote for NYST. If you had the money and the time on the weekends you could pretty much go about every weekend based on the calendar. Fridays are pretty much penguin, TTD likes Mondays.
Since I've got limited time off work I try to look at all the track day providers for more options. It can cost more because most of them have memberships that pay off if you get something like 4-5 track days from them in a year. So Penguin, boston moto, fishtail, and tonys track days are somewhat local. Team pro motion, n2(formerly nesba) motorcycle excitement, absolute cycle experience are some track day organizations that do east coast tracks like ncbike, VIR, Pocono, NJMP, summit point. Some smaller organizations only do one track or only a few days a year so they're harder to find. Sometimes looking at the calendar for the track you want to go to can help hook you up with who to buy the track day from.
As suggested racing is also an option. With penguin you can get a Friday practice discount for cheap, add in sat and Sunday practice sessions and maybe 1 race and its an ok amount of track time. Add more races and it gets a lot more expensive. Plus racing is a bit more risky even if you're not out to win, everyone else is and on a track day you don't have a standing start and some passing rules in lower skill level groups. You also have to spend a tiny bit of money on bike prep(safety wire, approved coolant or water and track fairings).
