Neither ad says when the belts were last changed and the valve clearances set. The silver one says "tune up" last season, but that could mean a lot or not much. If the tune up included belts and valves by a known, reliable tech, that's a major plus. Sil exhaust on both.

Another pasta ship. Seems like an easy fix. If I knew more about the clutches on these I would probably grab it up.
Couldn't be easier, working on the dry clutch. Getting the fairing off is probably the hardest part. Might likely need servicing (or replacement) of the clutch cylinder on the other side. At the very least, pulling out the clutch pushrod, cleaning it up or replacing if scored at seal areas, lightly lubing it, lube both ends lightly, etc., make sure spacing and torking are right and so on and so forth. And the usual service questions of belts and valve adjustment. (I think the service interval for belts and valves on those is 7500 miles, and belts replaced after 2 years regardless of miles.) I could go on blah blah blah ...
Everything you need to know is on ducati.ms. For parts, if you don't have a dealer handy, deal with Ducati of Omaha. Just taking a chance that the seller's diagnosis is correct, and what other issues might be lurking. Maybe it's the gearbox rather than the clutch, f'rinstance. Might be worth looking into differences between ST2 and ST3. Still, at that price ... .

Maybe I've been out west too long or maybe I'm less impacted since apparently I have a high-mileage bike but I feel like a bike (especially older) with higher mileage might be a good thing as it wasn't sitting and presumably better cared for? Even dividing the mileage by age we're looking at what <3k miles a year for some of these?

Eh, good looking bikes but so so performance. For the right price sure but not crazy money. Also see parts availability.
I had a 2012 and I was a little disappointed riding it after readying all the amazing reviews. It has a nice even power delivery, but didn’t blow my skirt up.
Also, the rider seat pitches you forward more than I expected on a “naked bike”. It’s definitely a sport bike. Not nearly as comfy as the scrambler.
But still, I would buy a 05-10.
