Roebling has been improved its facilities big time since i last went there. But Summit Point has been repaved, and Roebling is desperately needing a repave. i'm swapping these two in my ranks.

CMP has been repaved ... place should be very quick!
Haven't been to the same track twice yet.
1. Pitt (first trackday I ever went to and it was awesome - but maybe it's only #1 because of rose tinted glasses)

I might be rating my experience instead of the track itself.
And my ranking is probably influenced by weather, not by alcohol
I went to NJMP in October and it was pretty chilly. Lots of people crashed early in the day and a few 20 minute sessions turned into 5 minute session. I grew to fear turn 5 (first left turn in a track of right turns apparently makes that side of the tire cold).
But I ought to go there again.
if you think NJMP is cold in october, then you would want to avoid NHMS as well. There tends to be a lot of "i wanna go fast" customers at their track days that do crash a lot.
NJMP is flat, so i can see why some dont like it. the facilities are pretty top notch though, and it's well maintained as it's a pro circuit. dirt track next door. pub onsite between the two tracks. kart track with miniGP racing. they even have paintball and a swimming pool there.
Thompson is a bit repetitive and stop & go. But the run onto the front straight is fun and saves it from being a snoozer. It does have a few safety issues.
Thunderbolt is a great race track in my opinion. A bit flat, but it has at least the one blind rise, and one technical corner, A few fast corners, a slow one, a chicane, and LOTS of passing opportunities.

Need to update and add by order of preference .
Results only matter At Daytona boring but has the best trophy.
Roebling should be higher on the list but a Crash there makes it suck.
Mid Ohio was is just the best mix of fast and technical.
VIR and Barber are close 2nd and 3rd
NJ is fast and would be higher if the others weren't so dam cool
Old Loudon and the Bridge are what I learned on.
NHMS needs a repave but is my home track.
Homestead is very fast but boring in a way.
Carolina needs help, The repave will help but??

Been twice and plan on doing it next year. so i can go to Barber with Arhma... its got some cool sections but there is just no rhythm to it!After returning to CMP since the repave, it stays at the bottom on my list. That track is awful.
