I'm currently replacing the bearings in all of my wheels with sealed bearing units from "All Ballz Bearings." Noted that the seals weren't there on any of the wheels that I have and wondered if I should press the new seals in or just simply leave them out.
Lastly, does anyone know of a Suzuki dealership that's open on Sunday's or Monday's? I have a clutch cover gasket that has a really slight weep (one drop per week or so) that I'd like to pick up a gasket for.

I can't see any harm from pressing the seals in, they make installing wheels easier by helping retain wheel spacers, and you paid for them, so why not install them?
