Looks like I have finally found the spot I have been looking for.
However given the type of place it has been and the location (Whitensville, MA) my older business plan will require some changes.
Before I tell you what I have in mind I would like to see what NESR and Americans in general find appealing and like the sound of for a place like that.
the quick breakdown.
It is now a Pizza place, thats it. We will have a full pizza menu BUT with a lot of additions that most pizza places do not offer.
It will be able to sit 70+ people. So dinning in will be an option. BUT we are not going full out restaurant with nice plates and expensive silverware.
Delivery and take out will be available.
Lots of windows that look on a busy street (no fancy view) in the place.
HOMEMADE is the key in our quality and we want it show with every dish available we will have.
everything will be made from scratch.
Most of the full out traditional dishes/recipes will be available for catering and/or Deli style.
We would like to "WIN" the families and the youth. We want to create a comfortable environment in which a family with kids can come and enjoy a meal but at the same time the local teenagers/younger people can come in and eat their pizza while watching a sports game on the TVs in the dinning area.
Greek direction in the name of the place is preferred but not a necessity.
Hit me with whatever you got. it is at the brainstorming stage right now anyways.
Also if you guys know anything for the area that you think might be helpful with what we are trying to do please contact me.
Even if you dont have anything to add let me know if you live around there, i might have some questions for you.

I've watched a couple Pizza places grow into something pretty big in my area. Seems you have the right idea with offering more than just Pizza and subs.
One that sticks out the most started out as a small pizza place in West Greenwich, RI. It was a small place in the lower level of a small plaza, the food was always awesome, but the atmosphere was kinda lame. The guy built a good reputation on the food, and built his own place a quarter mile down the road. Changed the name to Dan's place, full bar, full menu, live bands 3-4 nights a week, and still has the awesome pizza! Thriving business in what everyone said was a flooded market. Another thing, the prices are pretty reasonable for the food, and the drinks. Another thing that regular customers pay attention to, the owner Dan, is ALWAYS there working with his staff

So you have done a recent demographic study and " Know " that is your target customer base in the area ?
Will you be a fully licensed premise or just a beer/wine place ? or no liquor at all ?
As for a name I suggest "Apollo Pizza" , son of Zues and it puts you at the top of the yellow page section when people look to order out.

Pompeii pizza. Probably easier to associate a pizza place with italy than greece. I dont think most people would know the difference in regions anyway. It has a nice ring and the name pompeii is popular right now with the band, movie and it is one of the greatest tourist attractions in italy right now.
Id really like to see a pizza place in the style of Hooters or Twisted kilt but with a short toga but that might not go so well with your family business plan. But with 5 other local pizza places just in a 5 mile radius (technically like 3.5 miles) you might need something edgy.

My only other suggestion for winning both the families and youth, is to get some of the old sit down pac-man, asteroid, defender games.
They make excellant tables and your target customer base will be pumping in quarters, the whole time they are eating.

Have you checked into the possibility of getting a liquor license? I know when i owned my place the town only had like 10 to give out and they were never ever available. Places would close down but still hold onto the license for eons. Im told some towns just issue them all the time but I don't know which ones.
Unless you understand overhead, food cost, liquor cost, labor cost you are fucked. Remember pennies on paper are dollars in your pocket.

Pompeii is a great idea. It is however associated with distraction and failure.
Your idea is SICK! I believe this would catch in Chicago area like you wouldn't believe. Not really where I am looking though. And very likely way out of my budget. With some real quick math in my head to set it up with marble and fire pits and some other stuff you are looking at 500k + investment without buying the real estate

I'm sure you've considered this.. but in my area (which is admittedly pretty rural) all of the successful restaurants I can think of have location, location, location. Especially for the younger types.

it's a bunch of white people, don't call it greek anything...call it Ray's Pizza or something more white unless you're going to sell americanized greek food
imho, with small business, people just come or they don't. Not a whole lot you can do besides have a good location, be open, be clean, be fast, and be nice. Matching your marketing strategies to what will actually work is a bit of a crapshoot...
for your main street, it's just going to be the locals coming in and walk-ins...so have a sign outside or on a window that says "pizza $4.99" and sell that as your lunch special to target the business demographic that have $$ and looking for a quick bite...during that time sell combo's with pizza by the slice with a fountain soda for $4.
You know motivates me? price and distance...if you have the cheapest combo in town that's close to work, I'll come...spread the word to the local businesses and create a relationship with them. Maybe offer to cater a couple business events to get your name out there.

expect high turnover for your staff, and a lot of them are going to rob you...usually it's not a lot...setup security cameras and expect it

If you want to stand out from the thousands of other shithole pizza places in New England:
Make your own dough.
Use a real pizza oven, not those garbage Blodgett ones. Doesn't have to be wood fired.
Make your own sauce. Canned crushed tomatoes with a little oregano isn't sauce, it's an insult.
Real mozzarella. If you bought it from Sysco pre shredded, no.
But I'm a foodie, not your typical person.
