    Advice on a fryer and how to avoid burning the house down?

    dont drop the turkey in and dont put the turkey in if its the SLIGHTEST bit frozen.

    Other than that good luck and its the BEST tasting turkey you will ever eat

    Do it outside in the driveway, and do not over fill the pot with oil.
    Done it twice, learned by mistakes.

    Check the displacement before heating the oil.
    Make sure it is as dry as possible, like really dry.
    Lower it very slowly.
    Use a rig or a 2x4 through the coat hanger thing with 2 people.
    Keep it away from structures, really.

    When in doubt listen to Alton Brown. Congrats on deciding on making the best turkey ever.

    Put turkey in the fryer, fill with water till covered, remove trurkey. This is how much oil you should use. Inject seasonings, dry bird, put it in hot oil. Enjoy.

    Brine it. Alton knows best.

    You won't regret the brine.

    It'll come out pretty dark looking, but your sister in law who is normally a picky eater will be caught picking the carcass alone in the kitchen three hours after the meal is done. That's how good it is.

    For the fryer, look for STURDY legs.

    I lower mine in using Alton's stepladder method, but I'd also used a 2x4 and a sturdy hook. DRY bird, lower it very slow. You'll soon get to know how fast you can do it.

    Any recommendations for a fryer - I know sOme specifically say indoor or outdoor, but I had intended to do it outside either way, yes?

    A real fryer is propane. Anything else is just a waste. Yes, outside, away from any structures. I have 4 patio blocks I set it up on my lawn with.

    You are essentially just buying a massive burner with a stand, a big pot and a thermometer. That's all you need (well, that and a turkey platform to lower it in with).

    Looks for strong sturdy legs. If it is flimsy, it is dangerous.


    Remember, PEANUT OIL! Tastes best and fries best of all major oils. Get the straight stuff if you can, most "peanut oil" is actually a blend.

    Seriously though, away from structures and cars. If something goes wrong burned grass isn't as bad as a house fire.

    I almost bought one at home depot but then i just thought how much it would get used so i passed, We cook ours at inlaws with the fryer, taste awesome...

    IMO its only OUTSIDE project. Peanut oil is where its at.. as everyone else said as dry as possible bird and lower it very well..
    best turkey you ll ever had.. did for the first time 3 years ago and never stopped doing it since.. every year it becomes better lol

    If you're using peanut oil. Be sure to let anyone and everyone know. Here at work on another shift there was an alregic reaction from a co-worker who brought in left overs and shared them.

    I saw on the news the other day that butterball makes a new turkey fryer that is electric and cleared safe for use indoors.

    My pops bought an infrared turkey frier a coupla years ago and it is BY FAR the best turkey I've ever had. He all but packed up the oil fryer version since. Each T-day he fries one in the infrared, rotisseries one and roasts one. The infrared turkey disappears in no time. No oil, no waste oil. I believe his is propane operated...

    And yeah, he brines 'em overnight too. Brine, infrared fryer - WINNING!

    Like everone said, make sure it is not at all frozen and as dry as possible. Take the bird out of the fridge beforehand to bring it closer to room temp.

    I bump the oil temp up to about 385 before dropping the bird in. When the cold bird hits the oil the temp drops quickly, and starting it higher than 350 helps offset this.

    I don't like fry on the driveway because splatters are inevitible when you put the turkey in.

    You can reuse the oil. Once it's cool pour it through a coffee filter to catch the bits and pieces.

    Soak the bird in brine for a day before.

    Dry the bird well, lower the bird very slowly to let the steam out.

    Make sure you remove the neck, gizzards, heart package in the carcass ... forgot that one year. Made a mess.

    This past Friday I dd a test run in the smoker. apple wood with a great rub and sauce.

    My experience with poultry in a smoker is do not run a real low temp as it dries out fast. I did the bird at 325 for 2 3/4 hours and it was perfect. 12 pounds.

    You brine 'em no matter what. It's the only way I'll prep a turkey now. But I'm not even remotely a fan of smoked turkey - hate it actually...

    This thread inspired me. While talking to my brother, found out someone gave him a fryer kit 2 christmas' ago so it was on.

    Our mother wasn't thrilled by us stealing her thunder and insisted on baking a bird also. 3/4 of her bird was left and team driveway's bird was a skeleton by the time the table was cleared. My father told me figure out which infrared fryer I want and let him know and he'll buy it for us next year.
