With this lift, can I take off say the front wheel only and not run the risk of the weight change causing the bike to fall over ?

It should be fine so long as the girl's don't let it go....
Laws of Physics say it will become unstable at some point....It does look like there is some type of "Lock" to hold it, but not sure...

It's using the pegs as tie down points, so you should be ok. I'd normally run a strap over the seat and under the lift plate but those peg hooks should do the same job.
If this locks then I may get one also. I was wrestling the bike's around the other day thinking of how to lift them for simple Maint. work....

I need a new toy...
I only have issues with my dirtbike tipping when I get to taking off fork legs or swingarm. If I am doing that ,I put a tie down around the footpegs/under the stand to keep the frame/motor put.
