Be a cool project for sure.. Not many 750s made in green most were red. But a lot of work to bring that one back to life.. bikes that have sat for a long time are a problem... and looking at the rust on it there's more issues then you can see.

$2700 for a carb'ed VFR is-in my opinion-high. I would ignore his ad until he got into the $1500 ballpark. But that's me.

I don't think that's a bad price actually.
I sold one like that a few years ago with 25k miles for $2300 on ebay and the buyer had it shipped to Georgia.
If it really has only 8k I'd say that's very fair. Prob offer $2400 or so
