I voted for sport-bikes.
I wouldn't mind watching sport-touring or adventure touring stuff either, that tends to be some pretty interesting TV since they visit cool places.
Just don't care about "This awesome bike was 'customized' with factory options A, Z, Q, and R! That makes it really stand out in this parking lot!"
Sometimes I like watching the dirtbike races but it's usually way too hard for me to follow, at least on the short indoor tracks where everyone is bunched up. A Trail riding show would be fun to watch.

The only "intuitive" interface is the nipple.
I always enjoyed the paris-dakar race but I no longer get speed tv so now I'm without my fix.
