I have a sony DCR-PC120BT....mini divi at about 530 lines of resolution.
For the capture side I got a Canapus Raptor RT
For software Adobe Premier 6.0
for compression I have found MPEG-4 16:9 aspect ratio to be the best....size is a little big but rather have better quality than smaller file size

Adobe 6.0 is great...I found it very easy to use... haven't used any other software packages but 6.0 makes it easy... real time editing is cool (buy you really need a computer with great processor speed and massive amounts of ram. (next on the list)
everything is pretty much drag and drop...take in your raw DV, organize it, crop it, add transitions, add music, render it, watch it, compress it.... that is basically it...
