I've done T-days with a 5 year old rear and kept up with top intermediate yellow riders in NJ on the completely stock Hawk. Should be able to handle the Canyons like most any tire. just got to know limits on things sometimes. Hell they use this Tire for Vintage racing. can't be all that bad.

so I kept pushing the limits on the Shinko podium 006...made it to ~9,000 without it popping...

only issue is - the rear didn't come in a 140/60, so I got a 140/70...
the tire is quite a bit bigger than I expected, so the rear sits higher, acceleration is a bit slower, and rpm's on the freeway are lower too...but she's mostly a commuter bike, so all that should be okay!
