So I'm looking for a new track bike, apparently there are a LOT of spot VIN checks down here, even at track days and stuff. Is there any legal issue having a salvage title on a track bike?

No, the only thing that matters is the vin is not in a police system as stolen.

salvage title is more legit than no title. still as stated as long as it's not stolen nobody cares at the track.

A salvage title is valid proof of ownership. Salvage just means in some states it can't be registered for street use, which typically torpedos the resale value.
