I just did an oil change on my 2000 GSX-R750. I noticed that with the clutch pulled in and the bike in gear it is significantly harder to move than in neutral. The bike was ice cold when trying to do this, so I suppose that doesn't help.
The clutch was also a bit loose so I adjusted the clutch per the service manual but it didn't help the situation. At least I know that the clutch is adjusted properly now lol.
Is this normal or should I be super worried?
I wanna say that's the case with All the bikes when they are shut off and even more in the winter?
Normal...

you must have been trying to push the bike? by ice cold, below 32?
I wouldn't be worried. The oil is much thicker when cold and since it's in gear you're turning the gearing in the trans plus the clutch plates. The thicker oil is going to be harder to shear.
To confirm this, start the bike and let it come to full temp and you could try it again and I'd bet its better. But really as long as the bike doesn't try to creep when fully warm with the clutch pulled and in gear there is nothing to worry about.

That's what neutral is for. What you experienced is normal. I'd be worried if it was easy to roll with the clutch in while in gear.
