Trying to open up the exhaust on the old 911 and want to do the 'bypass'
basically weld in a 2.5 inch or so pipe between the inlet and exhaust thus bypassing the actual muffler

No I don't want to bring it to Lou's Custom lol

Don't know how close you are to Taunton, but check out "Paul's Exhaust". They have a good reputation around here, have done some stuff for me a few years ago and were honest and competent. Lou's is a disaster.
