I saw some great suggestions for the Prime Rib so maybe I can get some suggestions for Goose.
I've never done a Goose but the recipes I've seen vary wildly. Several say to steam it for some period of time to get some of the fat out...? Seriously?
Any one here had any good results doing a fresh goose?

So, Manny....how'd your goose turn out? Ours was fantastic. Kept it simple. 12 lbs. Pricked the skin all over, loosely stuffed with stalks of celery, carrots, leets and parsley, salt and pepper, then in a 350 oven, covered lightly with tin foil, for about 3 hours. Uncovered and basted a couple times the last hour. My son carved it....the wing and leg joints are a little harder to find than a turkey but he's awesome and presented it beautifully!
After dinner, he tossed the carcass, into a pot with more carrots, celery, etc and simmered for about 4 hours. The next morning we strained the stock and I made a soup last night. Freekin' awesome!

Don't know anything about goose, but my wife made a freakin fantastic roast for Hanukkah dinner a couple weeks ago. She made it again for Christmas dinner for her family yesterday and it was just as good.![]()
