Lots of people here have used GPS loggers at the track. The latest feature being added is lean angle measurement. Google/YouTube search "GMOS JI100T" for an example. Overall, I'm not convinced knowing your lean angle would make a meaningful difference to your riding.
My two cents...
Lean angle is the result of your riding inputs (confidence in tire grip, decisiveness of your inputs, speed, body position, ...). We've been doing fine exploring max lean at the apex, an electronic gizmo is not a game changer. But what about entering brake zones, like NHMS T1? You're at max speed, then pre-turn, while the bike is leaned over (a little) you start braking. I’m not sure, maybe measuring lean angle could be helpful, and help experiment with body position that minimizes lean angle during braking.
So let’s hear your thoughts on it...

lets use T9 for example.
lets say your going through T9 at 60 mph and 30 degrees of lean
then you make some body position changes
now you data says your going through the same corner at 60 mph but at only 22 degrees of lean due to new body position.
well you know that you and the bike are capable of at least 30 degrees of lean because of previous data. but now with your new body position you dont have to lean as far to go as fast. that means you can go faster. maybe now you can do 75 through T9 with 30 degrees of lean. BOOM! now youre going faster

It'd be great to have access to that data.
It's not the most important info to have, but it'd be useful for a lot of things. Making body position improvements, determining how quickly you reach max lean, how quickly you flop in a chicane, monitoring trail braking rates compared to lean angle, monitoring acceleration rates vs. lean angle, etc.
I'd love to see data from some of the fast guys showing how hard they're braking at what lean angle. There are less direct ways of getting similar info, but having the lean angle would be cool.
Those loggers won't give you the most concrete number though...you have to take into consideration the turn's camber, i.e., 50 degrees in NHMS T1 isn't the same thing as 50 degrees in The Bowl. Still useful info though.
