Has anyone ever rented a motorcycle around here? My wife and I are interested in buying a BMW R1200 GS and would love to rent one for a day or weekend to see if we really want to invest the kind of money involved.

they offer demo rides on their Bimmers then
BMW will let you test ride anytime. You can take it for a while too. I know when I test rode an RT1200 at Wagner they were very easy going about it.

What other bikes are you considering?
The R1200GS kicks ass ass ass. Way comfy, eats up those shitty roads so common to upstate VT/NH/ME. Extremely manageable on non-paved surfaces while remaining composed at quite a brisk pace on paved surfaces. Not a lot of steam up top, but plenty of power up and down the rev range. Handlling/braking feels a bit funky at first, but feels fine after a couple of miles. Weird having the motor torque the bike to the side, but you ignore it quickly.
The bike is like a gigantic Swiss Army knife. A quality machine that's extremely functional. It'll wheelie, too! It won't get the adrenalic flowing quite like a sportbike, but its competence really allows you to enjoy the ride at a good clip without having to focus so much on making it enjoyable like a sportbike often does. I've never ridden a cushier bike, and wouldnt' want for one. My bro rides two up with his and has no issues/complaints, other than the first year gremlins he's had to chase out.
