So I have been running a 190 o my 749R very happily the last 2 years or so.
This year only a 200 is available. I'm wondering if anyone has experience with it and how it compares to the 190.
My Rim is a 5.5 so I am wondering if I am better off going to a 180 instead...

Manny, the specs for both the 190 and the 200 suggest an optimal rim width of 6", where the 180 is suggested for 5.5" rims. I know you've been using a 190 on your 5.5" rim, and if that's worked for you, the 200 should also. The 190/60 from last year was 194mm wide, and this year's 200/60 is 198mm. The height for both is identical, at 658mm.
On another note, the Diablo Superbike PRO trackday slick is available in 190/55.
On yet another note...I did just get(waiting on my doorstep when I got home from LRRS) two 190/55-17 race slicks, SC2(green), with production dates of 0611(sixth week of 2011). I've got no clue why they made them, because the 190/55 wasn't even available last year(replaced by the 190/60), but if you think one of those would work better for you, I've got them. The 200/60 is definitely the "hot setup" for big bikes on Pirelli going forward though.
