I changed the coolant (and as an unfortunate side effect, the water pump) a few weeks ago and it is still overheating, so I'm suspecting the thermostat is junk. Not terribly tech-savvy, so trying to figure out if it is worth trying on my own, or if I should just bring it into the shop. Anyone have any experience/tips?

My experience is once you overheat badly, the thermostat is junk.

I don't see any mention of your fans kicking in. Are those even working?
EDIT: Should kick in around the 230 range...somewhere in there
you do see the ciruculation in the radiator at approx 180-190 degrees right?
