Just put a new chain on the DRZ and it's a bit too long. I've only replaced a chain once before on a previous bike and I never had this issue. If I brought the chain to a local shop would they be able to drop a link? Or is there an easy way for me to do it at home? I don't have a chain cutting tool, so I don't want to start hacking up a brand new chain.

I have a chain tool here in Raymond. You can use it if you want. Local shop can do the work easily enough though.
You'd need a chain tool to remove the rivet. I'm sure most shops would be able to do it. Or see if anybody here offers (I would be happy to cut it down if you're ever in my neck of the woods).
Grind the head of the pin flush with the link. Pry it off with a screwdriver.
