I'd echo what some of the folks on here are saying; buy a race prepped SV and sell that one on CL. Hell I probably have a first gen in the basement (w/ all the go fast goodies) I can part with that's ready to go if you so desire.
If you're hell bent on prepping the bike you have, I'd be happy to sit and talk you through the nice to have's verses the want to have's, and can also point you toward some of the local fast guys (of which I am not one). Speaking from experience, it's easier to start with a prepped platform and an owner you can go back to for questions (where the hell did that wire go anyways??).

my sv track build went like this
I bought a crashed but clean titled, low mileage, perfectly running stock second gen street attired sv,
then I bought:
a set of used (straight) forks, stock
used rearsets off svrider
used spare wheels and rain tires off svrider
woodcraft frame sliders, fork sliders, and spools
put a power commander in and had it mapped and dyno'd
some horrible used track bodywork, some cans of spray paint and some masking tape
misc brake pads, safety wire, metal for mounting the bodywork, exhaust heat shield, some levers, etc.
professional suspension setup, including brand new penske shock, sprung for my weight, fork springs and gold valve emulators, fork service, geometry optimization, frame straightness check..all that wasn't cheap but was worth it!
I'm very, very happy with the bike (and I've owned a lot of bikes). It can be put back to street easily. It handles awesome. Stops good enough for blue group track days or amateur class racing even with my oversize load on it. No motor mods and I don't anticipate any. From here on out, I plan to routinely: change the oil, watch the brakes, chain and sprockets, keep the suspension fresh, and flog it like I stole it.
so I guess the takeaways: you dont have to do that much to an SV. Lots of stuff you want on a track bike are available used. I wouldn't worry too much about learning through a build, because you probably wont be in the engine, will sub out the suspension, and the rest you will be wrenching plenty either way. It is possibly cheaper to buy a complete track setup, but don't underestimate the costs of getting it sprung for your weight, freshening the suspension, and getting spare wheels and rain tires if they aren't included.

Yeah...stock except for ratty can that came with it. Certainly no performance upgrade.
It is always, always cheaper to buy someone else's prepared bike than to build one from a stock bike.

Good choice E83, building a race bike from a street bike is costly, frustrating, time consuming, costly and more frustrating. Take it from someone who did it with a fossil. Look around for something that is at least a track bike, compile a list of shiny bits, focus on suspension first!! and come to a race weekend at Loudon and walk around. People here and at the track are very willing to share some knowledge and bullshit, your job is to discern which you are getting. Come to track day with your street ride, you can still have fun and meet more great peps.
